Biryani kaise banaen

 Biryani ek popular Indian dish hai jo aromatic rice, masala, aur mutton/chicken/vegetables se banai jati hai. Yahan main aapko biryani banane ke kuch basic steps bata raha hoon:


**Samagri (Ingredients):**

- Basmati chawal: 2 cups

- Mutton/Chicken/Vegetables: 500 grams

- Pyaaz (Onion): 3 large (bareek kata hua)

- Tamatar (Tomato): 2 medium (bareek kata hua)

- Dahi (Yogurt): 1/2 cup

- Adrak-lehsun ka paste (Ginger-garlic paste): 2 tablespoons

- Hari elaichi (Green cardamom): 4-5

- Laung (Cloves): 4-5

- Dalchini (Cinnamon stick): 1 inch ka tukda

- Tej patta (Bay leaf): 2

- Biryani masala: 2 teaspoons

- Lal mirch powder (Red chili powder): 1 teaspoon

- Dhania powder (Coriander powder): 1 teaspoon

- Haldi powder (Turmeric powder): 1/2 teaspoon

- Namak (Salt): Swad anusar

- Ghee/oil: 4 tablespoons

- Pani (Water): 3 1/2 cups

- Kesar (Saffron): 1/2 teaspoon (doodh mein bhigoya hua)


**Biryani Banane ki Vidhi (Instructions):**


1. **Chawal pakaen (Cooking the rice):**

   - Ek bade bartan mein paani garam karein aur namak daal kar ubalne dein.

   - Chawal dalein aur pakne dein jab tak chawal adhe se zyada pakein (around 70-80% cooked). 

   - Chawal ko chhan kar rakh lein aur thanda hone dein.


2. **Korma (Preparing the curry):**

   - Ek kadhai mein ghee ya tel garam karein.

   - Pyaaz ko golden brown hone tak bhunein.

   - Adrak-lehsun ka paste daalein aur bhunein jab tak raw smell chala jaye.

   - Tamatar, dahi, biryani masala, lal mirch powder, dhania powder, haldi powder, hari elaichi, laung, dalchini, tej patta aur namak daal kar bhunein.

   - Mutton/Chicken/Vegetables daalein aur acche se bhunein jab tak masala ache se mix ho jaye aur meat gal jaye (agar vegetarian biryani bana rahe hain toh sabziyaan soft ho jaye).


3. **Dum dena (Layering and Dum Cooking):**

   - Ek bade cooker ya handi mein pehle cooked chawal rakhein aur upar korma evenly spread karein.

   - Kesar wala doodh chawalo par daalein.

   - Dhakkan se dhak dein aur medium flame par 15-20 minutes ke liye dum par rakh dein, taaki flavors achhe se mix ho jayein aur chawal puri tarah se pak jayein.


4. **Serve karein:**

   - Biryani ko dhyan se mix karein aur plate mein serve karein.

   - Raita, salad ya mirchi ka achar ke saath serve karein.
